Another entry in the Cellar Series by Cornell & Diehl is Bourbon Bleu. This crumble cake is made by pressing a variety of ripe Virginias with dark-fired Kentucky and Perique, and is finished with a bit of Bourbon flavor. Time will allow the blend to become more balanced, deeper and sweeter, and should be at its best in 10 to 15 years.
